Green olives, Halkidiki variety, from the Holy Monastery of the Annunciation of the Virgin in Ormylia, Halkidiki. These olives are produced with the undivided care of the monks and are a 100% natural product, with no chemical ingredients added.
The nuns collect the green olives in September by hand, one by one with great care, trying not to damage them. Then, they are sorted according to size and quality, washed well and placed in large barrels, filled with brine.
The olives remain in the barrels until the necessary fermentations take place and the bitter taste of the olives has been removed. Then, the herbs and spices are added to provide their unique taste.
The green olives of the Monastery are not pasteurized and for this reason it is possible that their fermentations will continue after they are packed. Either way, the olives remain firm and crunchy, retaining their rich nutrients.
For all production and processing activities, the ISO 9001 & 22000 quality system is applied. The olives are available in Vacuum sealed packaging. Kept in a cool, dark and dry place. After opening the package, keep refrigerated.
Ingredients: Green olives, Halkidiki variety, with red peppers, hot peppers, garlic, fresh basil and spearmint, organic vinegar, extra virgin olive oil and sea salt brine.
