Kormilitsa red wine made in Mount Athos
Origin: It comes from a selected vineyard in Metohi, Chromitsa of the H.M of Saint Panteleimonas, in Mount Athos, in an altitude of 250 m. over the sea.
Ground: Clay soil.
Subsoil: Deep limestoned subsoil with adequate moisture.
Climate: Ideal climate conditions with increased sunshine, little rainfall and sea breeze.
Composition: Cabernet Sauvignon and Limnio are made by the organic farming of vines with low yield.
Classification: Athonite local wine with protected geographical indication.
Vanification: Traditional red vanification in opened oak tanks (50 hl).
Intensive and prolonged recycling during the fermantation, exploiting the large surface wetting for intense extractions.After that, the malolactic fermentation in french oak barrels of 225 lt. takes place, for the slow and gradual incorporation of substanses extracted from the barrel to the wine.
Aging: After its remaining in french oak barrels for eight months, reductive aging in the bottle takes place for four months where it keeps improving its character.
Character: Deep scarlet colour with ruby highlights.
Elegant aromatic character of forest fruit, cassis, spices and licorice, combined with the sweet character of the vanilla and the vermicelli which are the result of several months of aging in oak barrels.Rich and attrctive palette, with a strong body and special aftertaste, characteristics which reveal its rich dynamic and excellent adjustment of the varieties to the micro-climate of the region.
Serving suggestions: It is served in 18 - 20 Celcius degrees, combined with meat and rich red sauce, hunted meat and aged mature cheese.
