Athonite Fish Soup

Ingredients:
1 kilo of several fish suitable for boiling
2 onions
1 bunch of celery
4 carrots
2 red peppers
1 bunch of chopped dill
4 potatoes
¼ cup of oil
½ cup of rice
Salt, pepper

Instructions:
Clean and wash the fish and vegetables. Boil the fish and the vegetables in 1.5 liter of water, except for the dill. As soon as they are well boiled, take all the vegetables and mix them in a blender, except for the peppers, which must be thrown away. Strain the fish and put the broth in a pot. Add the oil, the dill the salt and the pureed vegetables. Let them all boil together and then add the rice and mix them for about 10 minutes. Get the pot off the stovetop and add a little bit of lemon and pepper.

We wash the cauliflower, cut it in pieces and throw awy the thick stalks. We peel the potatoes, cut them and boil them with the cauliflower for 20 – 25 minutes. We keep ½ litre of  the boiled water and melt the rest of the vegetables. We add some salt, pepper and nutmeg. In a pot, we melt the butter, we add the flour and let the mixture become “golden”.

Little Orange Pies

In a pan,  we heat the margarine , we add the marmalade, the juice, the orange peels, the liquer  and we mix them  well. We fill each little flaky pastry with two spoonfuls of the mixture and we fold it in two, so that it is like a triangle. We spread a little melted butter on our small orange pies and we bake them in a warm up oven, in 180 degrees for about 20 minutes.
