Rice with Tomato Sauce and Mushrooms

Ingredients:
2 cups of chopped mushrooms
2 cups of parboiled rice (yellow)
2 dry onions
1 fresh onion
2 fresh and mature tomatoes
2 cloves of garlic
2 spoonfuls of vegetable butter
Oil, salt, pepper
Red hot pepper (optional)

 

Instructions:
Saute the onions in the oil and add the chopped mushrooms. Add the garlic, the tomatoes, salt, pepper, the two cups of water and the red pepper. Let the sauce boil until the water is evaporated. As soon as the rice is boiled, serve it in a plate and pour the sauce on it. You can also sprinkle some grated cheese and some chopped parsley.
