Halkidiki variety green crushed olives, vacuum-packed, made in the olive groves of the Monastery of the Annunciation of Virgin Mary at Ormylia, Chalkidiki.
The pure olives from the Ormylia monastery are carefully collected by hand from the trees, so as not to damage them. They are then sorted according to size and quality, washed and “crushed” according to the traditional methods of the nuns in the monastery. After that, the olives are placed in large barrels, which are filled with brine and they remain in these barrels until they are debittered and all fermentations are complete. Then, vinegar is added together with a variety of herbs and aromatics to mix the flavours and imbue them with aromas while they are being prepared. They are not pasteurised, remain firm and crispy preserving their rich nutrients. It is this uniqueness that imbues them with their singular flavour.
Lemon, garlic, oregano, hot peppers and extra virgin olive oil create a special composition for these unique olives from the Simonopetra glebe in Ormylia, Halkidiki.
The debittering takes up to nine months and is done only with natural - traditional methods without the use of chemicals. This way, the olives maintain all their organoleptic characteristics.
For all production and processing activities, the ISO 9001 & 22000 quality system is applied. The olives are available in Vacuum sealed packaging. Kept in a cool, dark and dry place. After opening the package, keep refrigerated.
