Cauliflower with Apple and Orange Sauce

Ingredients:
1 large cauliflower
1 apple
1 orange
1 potato
2 celery leaves
Sugar
Salt
Oil
3 carrots
1 can tomato juice

Instructions:
Wash cauliflower and cut into large crests. Put in the tassel. Wash well the orange, cut into thin horizontal slices along with the skin and spread between cauliflowers. Cut celery and one carrot into slices and add them in the tassel. Prepare, in a bowl, the sauce. Put the tomato juice, the potatoes, the carrots, the apple, oil, salt and half a teaspoon of sugar in a blender. Pour the sauce on top of the cauliflowers and add water, under the height of the cauliflowers. Boil over low heat and stir the pot occasionally.

Cauliflower Soup


We wash the cauliflower, cut it in pieces and throw awy the thick stalks. We peel the potatoes, cut them and boil them with the cauliflower for 20 – 25 minutes. We keep ½ litre of  the boiled water and melt the rest of the vegetables. We add some salt, pepper and nutmeg. In a pot, we melt the butter, we add the flour and let the mixture become “golden”.

    On Mount Mela of Trebizond, at an altitude of 1.063 meters, inside a cave was founded the monastery of Virgin Mary of Sumela in 386 AD. The monastery was built by two Athenian monks, Barnabas and Sophronios, and this particular name was given to Virgin Mary, because of an expression, which Pontic Greeks were using when they were climbing the Mount Mela.
    The miraculous image, which, according to tradition, was drawn by the Evangelist Luke on wood, along with the Holy water with the healing abilities, were the reference points of the monastery.
