It comes from a selected vineyard on Chromitsa Glebe (Metoxi Chromitsa) of the St. Panteleimon Monastery, on Mount Athos, at an altitude of 250 meters over the sea.
Ground: Sandy clay soil.
Subsoil: Deep calcareous subsoil with adequate moisture.
Climate: Ideal climate conditions; increased sunshine, little rainfall and sea breeze.
Composition: Cabernet Sauvignon and Limnio, organically farmed in vineyards with low yield.
Classification: Athonite local wine with protected geographical indication.
Vinification: Traditional red wine vinification in opened oak tanks (50 hl). Intensive and long recycles take place during the fermentation, taking advantage of the large wetting surface for intense diffusions. After that, follows the malo-lactic fermentation in French oak barrels of 225 lt., in order to slowly and gradually incorporate the extracted substances from the barrel to the wine.
Aging: The wine remains in French oak barrels for eight months. Then follows a reductive aging in the bottle for four months, while the wine keeps improving its character.
Character: Deep scarlet color with ruby hues. It combines the elegant, aromatic character of forest fruit, blackcurrant, spices and liquorice, with the sweet character of vanilla and truffle which are the result of the wine’s aging in oak barrels for several months. Rich and attractive colors, fullbody, and special aftertaste are characteristics that reveal its rich dynamic and the excellent adjustment of the varieties to the region’s micro-climate.
