Lenten Wallnut Pie

Ingredients:
¾ cup tahini
1 ½ cup sugar
2 cups lukewarm orange juice
½ cup raisins blondes
½ cup black raisins
1 ½ cup walnuts thick grounded
1 cup chocolate truffle
2 cups soft flour
2 cups durum flour
Peel of one orange
3 teaspoons baking powder
1 teaspoon baking soda
250 g. chocolate

Instructions:
Beat tahini and sugar with mixer until it gets white. Successively add the remaining ingredients (except for the chocolate) and mix well. Pour the dough on a floured baking pan or mold and bake at 160 degrees for about 30 minutes. Allow the cake to cool. Melt the chocolate in a bain-marie and pour it over the pie.

The founder of the monastic state of Mount Athos, Saint Athanasius the Athonite, decreed that each monastery should have its own vineyards. Thus, since the 10th century, the founders of the monasteries, recognizing the value of wine, have numerous vineyards in their monastic properties. On Mount Athos, there were no large areas for grain, due to the geographical difficulty and the wildness of the place. However, the microclimate of Mount Athos as well as its special vineyards, are key factors for a distinct wine production, unique throughout the Balkan Peninsula and the Northern Aegean. Even today, a number of monks from each monastery are in charge of the cultivation of vineyards and the production of wine.
