Rice with Beans

Ingredients:
250 g. of beans
250 g. of rice
1 grated onion
1 chopped carrot
1 spoonful of chopped celery
4 ripe grated tomatoes
1 pepper
1 tea cup of olive oil
Salt

Instructions:
Soak the beans in the water the whole night. The next day, salt and boil them for about an hour. Strain the beans but keep their water. Wash the vegetables and cut them in small pieces. Sauté the onion and the peppers in the oil and then add the rest of the vegetables, the beans, the rice and the beans’ juice that you have kept. Let the food boil for 20 minutes.
